New Mexico

 

I have enjoyed several trips to the "Land of Enchantment".   The state has this nickname because of it's scenic beauty and rich history.    There is lots of vast open desert and majestic mountain ranges.   Buildings and residential areas are quite colorful.     The food is predominatly Mexican.    This was my first

encounter with chili verdi and chili rojo, where pork is served in a very spicy sauce made from green or red chilis.    The chili is served on top of corn torillas.  I also had a delicious pig roast and a homemade paella.   There are good margaritas and also the chelada, where beer and lime juice are mixed together.

My favorite place of all is White Sands National Monument.   It is a 275 square mile field of white sand dunes.    It's very silent and a great place to meditate.
