Peppermint Patties

Made quite a few of these for Christmas this year. They made a big hit at parties and also they make great gifts if you package them in small candy boxes.

7 1/2 cups powdered sugar

1/3 cup evaporated milk

1/3 cup corn syrup

3 tbsp. coconut oil

1 tsp. peppermint extract

1 20 oz. bag of Ghiradelli 60% cacao chocolate chips

In a large bowl, beat together the sugar, milk, corn syrup, coconut oil, and extract.

Make into a dough which is not too sticky. Add more sugar if it's too wet.

Roll into little balls and then squash them flat with a glass covered in wax paper.

Put the patties in the freezer until hard.

Melt the chocolate and dip the patties with a fork. Drain excess chocolate and place

them on a tray lined with wax paper, using a butter knife to push them off the fork.

Either make lines on top of the chocolate with the fork or sprinkle with candy cane bits.

Put them in the fridge to harden.
