Egg Drop Soup

It's winter, and nothing tastes better than a nice warm bowl of soup! This is a quick

and easy recipe which only takes a few minutes to prepare.

Ingredients:

4 cups of water

4 tsp. chicken stock base

1 tsp. vegetable oil

1 egg

1 tsp. sesame oil

6 tsp. cornstarch

1 scallion, chopped

Place the water in a sauce pan and turn the heat to high. While waiting for it to boil, beat the egg well

in a bowl and mix in 1 tsp. of vegetable oil. Also mix the 6 tsp. of cornstarch in 3 tbsp. cold

water in a cup. Once the water boils, stir in the chicken base. You can also use chicken

broth from a can or fresh made. Turn the broth down to low heat and mix in the cornstarch.

Simmer a bit until the broth is lightly thickened. Then take the beaten egg and pour it on top

of the broth in a circle. As the egg congeals, mix it gently with a spoon unti it is evenly

spread throughout the broth. Add 1 tsp. of sesame oil and mix in. Serve in bowls and top

with chopped scallions. I also like to add a little white pepper before serving.
