Chicken Barley Leek Soup

I saw some leeks at the grocery store tonight, and was wondering what I could make with them. I decided to use them in chicken soup rather than onions. It came out great!! I also added barley.

Ingredients:
2 chicken breast halves
8 cups of water
8 tsp. chicken broth base
2 carrots cut up
2-3 celery sticks sliced diagonally
3 cups of chopped leeks
2 bay leaves
1/2 cup barley
Put the chicken breasts and water in a large pot and boil for 25 minutes. Remove the chicken
and cool. Strain any skin or bits out of the water and then add the broth base. Mix well and
bring to a boil. Add the bay leaves and barley. Boil for 15 minutes. Meanwhile, cut up the
chicken into 1 inch cubes. After the barley cooks for 15 minutes, add 2 cups of chicken cubes,
the carrots, celery, and leeks. Let this simmer for another 20 minutes or more. Add some
fresh ground pepper, and a little salt if necessary. I used reduced-sodium broth base and
the flavor was fine without adding any more salt.
