Chicken Lo Mein

Here is a familiar Chinese noodle dish. This version uses dried chinese noodles

and a mixture of veggies. Chicken is used, but pork and shrimp could be added too.

Ingredients:

1 pkg. of dried Chinese noodles

1/2 lb. boneless, skinless chicken breast, sliced

oil

1 clove garlic, crushed

1 tsp. grated ginger

2 scallions, chopped

1/2 green pepper sliced

1/2 red pepper sliced

a handful of snowpeas, sliced in half lenthwise

1 cup of mushrooms

1 small can water chestnuts

1 small can bamboo shoots

sherry

Seasonings:

3 tbsp. oyster sauce

3 tbsp. light soy sauce

1 tsp. salt

1 tsp. sugar

Method:

Mix the seasoning ingredients together in a cup and set aside.

Cook the noodles in boiling water until al dente. Drain them and rinse with

cold water. Set aside.

Heat about 4 tbsp. of oil in a wok and add the ginger and garlic. Sautee for

about 30 seconds and add the chicken. Stir fry until chicken is cooked through.

Add a splash of sherry and continue to stir fry.

Turn heat up to high and push the chicken aside. Add the snow peas, peppers,

and mushrooms and stir fry about a minute or two on the side of the pan.

Add the rest of the veggies and scallions and toss everthing with the chicken.

Stir fry just for a minute and add the seasoning sauce. Add a good amount of

noodles to compliment the meat and veggies. (Depending on what brand of noodles

you buy, there might be more than enough in a package. Just eyeball it and add

enough so that everything is well blended, but there should not be too many

noodles.) Keep picking up the noodles and tossing with the meat and veggies.

I use a wooden spatula and a spoon. Large chopsticks work great as well.

Add a tsp. or so of sesame oil at the end and mix well with the noodles.

This recipe should make 4 servings.

**The key to good lo mein is don't overcook anything. Make sure noodles are

al dente before adding to the wok and toss everything quickly on high heat just

until everything is hot and well blended. Overcooking will lead to a mushy meal.
