Fresh Fig Salad with Honey Balsamic Dressing

I just love fresh figs! I recently found some light green ones at the market and made this quick, delicious

salad. I used toasted almonds, but walnuts could be used also.

Ingredients/bowl:

3 fresh figs, cut in half

bowl of baby arugula

handful of sliced almonds

handful of crumbled blue cheese

Dressing:

1/4 cup olive oil

1/4 cup balsamic vinegar

2 tsp. honey

salt and pepper

Mix together the dressing ingredients and set aside.

Fry the figs in a skillet, cut side down for a minute or two until soft and lightly browned.

Lightly toast the almonds in the skillet.

Top the arugula with figs, almonds and blue cheese.

Mix dressing well and pour on top. (There is enough dressing for a couple bowls)
