Creamy Chicken Korma

Here is a North Indian dish featuring chicken in a creamy nut sauce flavored with cardamom.

Ingredients:
1 lb. chicken cut into cubes
3 cloves of garlic, chopped
1 tbsp. grated ginger
2 tsp. coriander powder (fresh ground)
1/2 tsp. chili powder
1/2 tsp. garam masala
1 1/2 tsp. salt
Mix all the above ingredients. Set aside.
2 med. onions, thinly sliced
1 1/2 oz. cashews and almonds
Brown the onions in oil. Add the nuts. Sautee until deep brown.
Puree in a food processor with some water. Set aside.
1 tbsp. ghee
2 bay leaves
1 stick cinnamon
6 cardamom pods, seeds removed and ground
Melt the ghee. Add cinnamon and bay leaves. Add the chicken
mixture and fry for a few minutes.
Add the onion/nut mixture and then add 2 cups water.
Add the ground cardamom and cook on low heat until the chicken
is well-cooked.
Add:
3 tbsp. yogurt
1 tsp. sugar
1 tbsp. lemon juice
1/2 tsp. garam masala
Serve with basmati rice.
